The secrets of cheesemaking were revealed to students at Hotel Institute Montreux with a fascinating Masterclass run by, Alessandra Roversi, a Masters Graduate from the University for Gastronomic Sciences in Italy.

Alessandra brought the world of Swiss cheese to light for a group of students. Beginning with the history of Swiss cheese-making, Alessandra used anecdotes which gave a sense to the prevalence of Swiss cheese names worldwide. She explained the cheese-making process, from "fresh" goat and cow’s milk (non-pasteurized) and continued to the art of cheese tasting. Finally, students were able to taste a range of artisanally produced Swiss cheeses. By the end of the class, students had gained expert knowledge and will be able to choose and recommend cheeses with confidence in the future!

The Hotel Institute Montreux Masterclass Series is an exciting set of workshops run by experts in their field, who are invited to share their knowledge with students. Workshops are interactive and most of them include a practical element.
