Originally from Hyères, France, Tom decided to study at Culinary Arts Academy Switzerland for three years because he wanted to be educated in a multicultural environment, whilst gaining further skills in his passion in gastronomy and blending fine dining with local produce.

It’s impossible for me to picture myself studying Hospitality without immersing myself in other cultures. I knew the Swiss Education Group schools due to their reputation, but what made me decide was the strength of the SEG network and the incredible nationality mix that is present on campus.

After receiving his Bachelor’s degree in culinary arts Tom emigrated to the Auberge du Soleil in Napa Valley, California. After 4 successful working years in the USA, Tom was offered a once in a lifetime opportunity which he could not refuse. Returning back to France to take full ownership of La Grilhado.

I truly wanted to find my Varois roots after spending 4 years abroad, on top of the opportunity of having my own business.

When presented the opportunity to own La Grilhado, Tom wanted the restaurant to represent his unique persona, passion for gastronomy and business vision. This included providing a modern, fine dining experience to customers by preparing courses in front of them in an open plan kitchen. It also included implementing local produce into his recipes from local and bio producers from the region. This meant that the restaurant’s menu is adapted to each season and varies depending on the Chef’s findings at the market that morning.

Due to Tom’s unique concept, La Grilhado is a success and has inspired his next business venture, integrating the same open kitchen concept and transforming it into an interactive catering service. Like his restaurant, his catering service will combine refined cuisine with local produce available at your door around Var, France.
